Think of the Tequila Soleil as a Negroni (with tequila) meets a spritz (with beer) meets that wonderful feeling of relief only an ice cold drink on a hot summer afternoon can bring. The vermouth — use blanc if you have it, sweet red if you don’t — tempers the drink, but the key to a perfectly balanced Tequila Soleil lies in how you build it. Namely, you’ll want to add the ice last. This small switch in technique has a big impact, keeping the beer from deflating on impact and thus retaining a bubbly, refreshing vibe for much longer.

Ingredients

Yield:1 drink
  • ½ounce reposado tequila
  • ½ounce red bitter liqueur, such as Campari, Cappelletti or Contratto Bitter
  • ½ounce blanc or sweet red vermouth
  • 4 to 6ounces I.P.A. (preferably a session I.P.A.), chilled
  • Ice

Preparation

  1. Step 1

    In a Collins or wine glass, add the tequila, the liqueur and vermouth. Pour the beer over top to taste. (Start with 4 ounces for a stronger, more bitter drink, and add as needed, up to 6 ounces total, for a milder, hoppier drink.) Add ice, to taste, and serve.

Was looking forward to this one on a 105-degree day here in Texas, and I happened to have all the ingredients the same day it popped up as a suggestion. It's a great-looking drink but probably an acquired taste. I suggest getting your IPA really cold first and add plenty of ice; I also added some fresh lemon to brighten it up.

Also on a 105-degree day in Texas, I had the opposite reaction--I thought it was delicious. But then, I'm a fan of all things Campari, and it certainly comes through here, even through the IPA. Will try the lemon suggestion on my second...

Delish! I made it with campari and an amber ale b/c that’s what I had in the fridge. Didn’t mind the amber flavor. Perfect aperitif on a record heat day in the Bay Area.

I am a sucker for anything Campari and I hate beer. So, of course I had to try this to see if one of my favorite liqueurs could make beer palatable. So refreshing. However, I'll admit I add more like .75 oz of each of the liqueurs for a nice strong drink and a better balance to the IPA in my opinion.

This was good, not great. Lemon juice greatly improved it. I'm a big fan of Negroni's but this didn't give that vibe for me. One of my fav drinks using Aperol is a spaghett - use miller high life in bottles, take a big swig, add aperol (or Campari) and lemon juice. Enjoy straight out of the bottle.

This was, frankly, not good until I topped it off with some tonic water. It was delicious after that! Super refreshing, and the bitter orange flavor was refreshing and not overpowering - also super fizzy

This recipe is very fiddly and maybe not worth the trouble. However the end result was quite good. Give yourself a lot of time to make it.

it was fresh but i didn't love it. To be fair I don't love tequila, campari or vermouth - why i expected some sort of chemistry magic show to yield a drink that i would love is pretty crazy.

I was looking forward to making this new drink for a friend and although I am a Negroni fan and an IPA fan, I found this to be undrinkable! Too many other great options out there so I’m never making it again.

I didn't realize Campari was so expensive ($38 at my local store, probably less at Costco) but this is a nice, refreshing drink on a muggy summer afternoon.

This is not worth making. It ruined what could have simply been tequila or Campari or even simply a beer.

I was curious but pleasantly surprised. Doubled the tequila and added a wedge of lime. Very tasty!

I am just having a hard time with the idea of "wasting" delicious Campari or Aperol & a lovely tequila by pouring in IPA--a beer I loathe despite its popularity & my love of other beers. Wondering what beer I might use instead of IPA.

Made with Aperol - I think it works best and a few drops of lemon juice - 5 star otherwise 4 start on the original recipe :)

Ok, the drink I ended up making was good, but it admittedly is not this drink: I tried the original recipe and it’s nice, but as I’m not a big fan of Campari/bitter drinks, it wasn’t for me. So — I added another 1/4 oz tequila, plus ~1/2 tsp sweetened lime juice, plus another 1/2 tsp lime juice, and then just a tad grenadine. The latter wasn’t essential. Pretty tasty though! Especially on a hot day!

I was excited for this on a summery weekend at home featuring taco night. I didn’t have Collins glasses so I used pint and it was much more bitter / boozey than I anticipated. It is also dark red taking on all the color of the Campari - versus the sunshiney shade in the photo. Waiting for more ice to freeze & going to add more beer for round 2.

This popped up on NYT and looked and sounded wonderful. I love trying new things and bought all of the ingredients for this drink to serve to friends who came over for socially distanced cocktails. I made two for my parter and me before our friends arrived and it was so awful I has to make other drinks for our guests. What a waste of ingredients. I even tried adding lemon and it did not help much. I like bitter/funky, but this was just a really bad combination.

Kind of weird - next time I think I'll just have the IPA.
