Yield:Four servings
- 1½cups plain lowfat yogurt
- 8scallions,finely chopped
- 1teaspoon salt
- Freshly ground pepper to taste
Preparation

Place the yogurt in a paper-towel-lined sieve and let stand until the liquid drips out, several hours or overnight. Transfer to a bowl and stir in the scallions, salt and pepper.
