Two-Way Beans

Ingredients
Yield:About 5 cups
- 2cups dried beans, in any combination
- 2quarts water
- 4teaspoons dried oregano, thyme or marjoram
- 1bay leaf
- 4cloves garlic
- 1pound smoked turkey or chicken, skin removed, or smoked pork, fat removed, and meat cut in large chunks
- 4carrots, peeled and halved
- 2large onions, quartered
Preparation
- Step 1
Combine beans with water and 2 teaspoons of the dried herb and bay leaf. Bring to boil and boil 2 minutes. Remove from heat and allow to sit for 1 hour. Drain.
- Step 2
Add 2 quarts fresh water to drained beans with remaining dried herbs, garlic, smoked meat, carrots and onion. Bring to a boil; reduce heat, cover and simmer 2½ to 3 hours, until beans are soft but still hold their shape. Drain and discard the meat and bay leaf.
