Preheat broiler.
Combine the mashed potatoes with the scallions, salt, pepper, milk and add 1 tablespoon melted butter. Mix well.
Place the mixture in a heat-proof serving dish and smooth the top, using the prongs of a fork. Pour melted butter over the top and brown under the broiler.
I had CSA potatoes and scallions that needed to be used and this was the answer! I took the suggestion to officially make this “Champ” and served sliced sautéed sausage on top. Delicious!
This dish is known in Belfast, Ireland as 'Champ', usually served with grilled pork and leek sausages - some steamed turnip with grated nutmeg and butter in the mix makes for a good accompaniment to make a satisfying meal.
Wash it down with a small glass of buttermilk (not to everyone's taste, alas) or milk.
