Tossed simply with balsamic vinegar, olive oil, red-pepper flakes and grated garlic, green beans in the air fryer blister beautifully in a fraction of the time without heating up the oven. Equally tasty hot or at room temperature, these green beans can be made ahead and set aside if you want to cook a main dish in the air fryer after they’ve crisped. Green beans will crisp up nicely if left undisturbed in the air fryer, but like an oven, an air fryer can contain hot spots, so it’s worth shaking the green beans at least once for even cooking.

Preparation

  1. Step 1

    Heat air fryer to 375 degrees, if preheating is recommended for your air fryer.

  2. Step 2

    In a medium bowl, combine the green beans, vinegar, olive oil, red-pepper flakes and garlic. (If there are any nubbins of garlic left after grating, throw those pieces into the air fryer as well; those bits transform into tasty crisps, golden on the outside but still tender and soft inside.) Season the green beans with salt and toss to coat, massaging the garlic onto the green beans.

  3. Step 3

    Transfer green beans to the air fryer basket and scrape any remaining dressing on top. Fry at 375 degrees for 8 to 10 minutes, tossing with tongs or shaking the basket halfway through, until the green beans are charred in spots and fork-tender. (If you like your green beans with more bite, fry them on the lower end of this time range.)

  4. Step 4

    Transfer green beans and any crisped garlic pieces back to the mixing bowl or to a new serving bowl and top with any remaining sauce from the air fryer. Season to taste with salt and serve hot or at room temperature.

Cooking Notes

For a sweet and sour twist, I use the same amount of green beans, toss in a Tsp of olive oil, a Tsp of honey, half tsp of Kosher salt and dash of dried thyme. 375 x 8 minutes or 350 x 10 minutes if you don’t like the crispy blackened edges (play around with your air fryer). I make them in two batches to keep the cooking even and stop the fryer earlier with the second batch as they are invariably more likely to burn.

Not cooked enough after 8–10 minutes. Maybe should cook longer and at higher temp.

This was so good and easy! I love blistered and wrinkled green beans, but I do not love standing over a hot stove for them. This did take a bit more than 10 minutes from prep to finish (maybe more like 15-18) but the flavors and textures are totally worth it

Can't eat red pepp anymore so subbed a small dollop of Dijon mustard, which worked.

Game changer. I have an air-fryer toaster oven and I don’t think I’ll ever go back to pan-frying my green beans. Saves so much time and effort, and the texture of the beans was great.

This is delicious! It took longer to cook than the directions said, but that's probably my old air fryer's fault.

cooked in normal oven using speed convection setting, 425 for 20 min. spread beans on cooking rack within baking sheet. tossed in sauce afterwards immediately prior to serving.

Too sweet and not cooked quite enough

Add 1/2 to 1 teaspoon gochuchang instead of red pepper flakes. Scrumptious.

Didn't have balsamic on hand. Did everything else as written, 10 min in the air fryer - perfect. This was so simple and delicious.

Not everybody has an air fryer!

First NYT recipe I did not like! You could not taste the beans with the vinegar! Simply oiled and salted and roasted is wayyyyy better!

Made these in a toaster oven air fryer, highest temp (450F) and used a prewashed and trimmed bag of green beans from the fridge. I put some oil, garlic, and spices directly in the bag and shook them around before dumping in the basket. Took more like 20 minutes. All turned out very good! Very easy compared to sauteing or oven roasting.

Excellent!! Similar to blistering in a super hot wok, but actually easier (since my gas range can't get as hot as a restaurant's! Used TJs haricots green beans. The balsamic adds just the right hint of sweetness and there's no vinegar taste. Uniformly tender and blistery. Love this!

A little dry

First time I really did not like a nyt recipe! Love blistered beans but not the vinegar garlic taste! Can’t taste the bean itself!

We needed to cook them a bit longer than 8 minutes. We love the taste but found the beans a bit stringy. Did we do something wrong?

I was skeptical (I don’t much like my air fryer) but this was absolutely delicious. I followed the recipe exactly…just check the timing, mine were done perfectly in 15 mins. Served as a side with eggplant parmigiana. Amazing.
