  • Salt and freshly ground pepper to taste
  • 1tablespoon olive oil
  • 1green pepper, cored and deveined, cut into 1¼-inch cubes
  • 1tablespoon butter
  • 4tablespoons grated Parmesan

Preparation

  1. Step 1

    Cook the noodles in boiling salted water until tender. Do not overcook. Drain and reserve ¼ cup cooking liquid.

  2. Step 2

    Meanwhile, in a small skillet, add the olive oil and the green pepper. Salt and pepper to taste. Cook briefly until tender. Set aside.

  3. Step 3

    Return the noodles to the pan; add the reserved liquid, green pepper and the butter. Salt and pepper to taste; add Parmesan. Toss well and serve immediately.

Added lots more peppers and vegetarian gravy..made a tasty side dish.

This was mediocre at best. I made some additions (garlic, basil, walnuts). It still basically looked and tasted like buttered noodles with some minimal garnishes.
