  • 1tablespoon hot sweet mustard
  • 1tablespoon lemon juice
  • 1large clove garlic
  • Freshly ground black pepper to taste
  • 8ounces pork tenderloin

Preparation

  1. Step 1

    Turn on broiler, if using.

  2. Step 2

    Combine yogurt and mustard in bowl large enough to hold pork.

  3. Step 3

    Squeeze in lemon juice; mince garlic, and add it and the pepper.

  4. Step 4

    Wash and dry pork, and cut into four pieces; marinade in mixture, turning to coat both sides well.

  5. Step 5

    Prepare stove-top grill, if using. Grill or broil pork about 8 to 10 minutes, turning once and basting with yogurt-mustard mixture before turning.

  6. Step 6

    Cook only until slightly pink inside. Season with salt, if desired.

Just OK the first night, but the left overs were great the next night. Always plan to make one day and serve the next. Used Inglehoffer hot sweet mustard which stood up well to the full fat yogurt ( the only kind I had on hand).

So easy. Used cast-iron pan on outdoor gas grill (closed). Wonderfully moist. Used Hot Sweet Mister Mustard wh/ had zero bite, want to try another brand. Leftover slices made delicious sandwiches with roasted red peppers and crunchy spinach on Saloio bread slathered with yogurt-mustard mixture.
