The most negotiable part of Buffalo wings, it turns out, are the wings. Buffalo crudités can be just as crisp, Buffalo chicken dip just as tangy, and Buffalo cauliflower dip just as spicy and alluring. The whole dip — from caramelizing cauliflower to stirring together the creamy hot sauce base and baking on the generous layer of cheese — is made in one pan. You can bring the pan right to the table with dippers of choice and watch it disappear. Just because classic dishes are made a certain way — and Buffalo wings have a cult following, no doubt! — don’t be afraid to riff on them once in awhile. That's how new classics are made.

Ingredients

Yield:4 to 6 servings
  • 1small head cauliflower (about 1½ pounds), cored and cut into small florets (about 4 cups)
  • 1tablespoon olive oil
  • Kosher salt and black pepper
  • 2tablespoons unsalted butter
  • ½cup Buffalo-style hot sauce, such as Frank’s
  • 4ounces cream cheese, cut into pieces and softened (about ½ cup)
  • ¼cup sour cream
  • ½cup freshly shredded Cheddar (about 2 ounces)
  • ¼cup crumbled blue cheese (about 1 ounce)
  • teaspoons finely chopped chives or scallions, or to taste
  • Celery sticks, carrot sticks, bread, potato chips or tortilla chips, for serving

Preparation

  1. Step 1

    Heat oven to 375 degrees. In a 9-inch cast-iron or ovenproof skillet, toss the cauliflower with the olive oil and season with salt and pepper. Cover with a lid or aluminum foil and cook on the stovetop over high to steam, 5 minutes.

  2. Step 2

    Uncover the skillet and cook, stirring occasionally, until the cauliflower is fork-tender and caramelized in spots, about 10 minutes.

  3. Step 3

    Stir in the butter. Once melted, stir in the hot sauce and simmer until the sauce has reduced by half, about 3 minutes.

  4. Step 4

    Turn off the heat, then stir in the cream cheese and sour cream until combined. Sprinkle the Cheddar on top.

  5. Step 5

    Bake until bubbling around the edges and the cheese has melted, about 10 minutes. If you’d like the top to get browned, run it under the broiler for 1 to 2 minutes.

  6. Step 6

    Immediately sprinkle with blue cheese and chives. Serve with vegetables, bread or chips for dipping.

(*Diving in with modifications but really love this recipe!). Double the cali, zero cheddar, err on the side of restraint with the sour cream and cream cheese. Cancel hot wings.

I've made this several times. It's super good. I just recently tried it with cauliflower rice (it's all I had), and it's a game changer. So fast to pull together and almost more delightful. 5/5 either way.

One of our favorites! I agree with more towards 2-3 Oz cream cheese to cut thr richness a bit, but the butter is important to flavor and consistency. Texas Pete perfect.

I prepared this just as written, except for cutting the cauliflower into smaller pieces. I also steamed the cauliflower over medium heat, as I worried it would burn on high. Had qualms about 1/2 cup of Frank’s but decided to trust the recipe and was rewarded with a rich, spicy, cheesy dip that everyone loved. Easily served 8. Celery sticks are the perfect accompaniment.

Made this today! My cooking times seemed to be a little off from the recipe's--took more time to get to fork tender and I ended up putting the cover back on. Then only took about 5 minutes to cook in the oven! Tasty, though! A good vegetarian Super Bowl snack.

Just a frame of reference for anyone who's made the Frank's buffalo chicken dip recipe that was on the side of the bottles forever, this is about twice as much hot sauce to dairy, and thus is quite a bit spicier. I really enjoyed it, but for my spicy-adverse wife, it was a bit aggressive. That said, she still ate it, so it was obviously pretty good.

My family loved this when I served it at our Easter potluck! I followed the recipe very closely (just added a little extra hot sauce) and didn't think it was too rich, but I served it with carrots and celery so that helped off-set the richness of the cheese. A real winner!

Probably an excellent recipe and the taste was delicious but not a good dish to travel with. Need to eat it when it's hot and fresh out of the oven. Serve when you host, not when you're a guest and expected to bring an app.

Used 2 bags of thawed cauli rice from Trader Joe’s. Easy and delicious consistency. Great vegetarian app!

This stuff is soo good. I preferred a bit more hot sauce than prescribed, probably closer to 2/3 cup - I found it to be too diluted by the dairy otherwise (though you could also achieve this by cutting back on the cream cheese). If you use an actual "buffalo" sauce, the butter isn't really necessary since buffalo sauce is hot sauce + butter to begin with. It's amazing heaped on a baked potato.

Super good! How could it not be with that much fat? I used frozen cauliflower, which worked great and reduced prep time.

No notes, no changes. Made this for an NBA finals night in an attempt to sneak more veggies into what is typically a horror scene of calories. It absolutely worked! Rave reviews and no one missed the chicken. Will make again and again.

Made as written and it was a hit! Maybe slightly on the spicy end, but nothing crazy. Saw comments that it was best fresh, so I brought it to the party and did the final cheese melt bake there, which worked great. But later microwaved leftovers and that was fine, too, so don’t worry about it. Celery sticks are the best vehicle, no doubt!

Made this more or less as directed and wow! It’s really got the feel and flavor of the chicken wing classic. Honestly a bit chunky to go with celery but Fritos or tortilla chips served well. A great party food.

I made this vegan by using all non dairy versions of cream cheese, sour cream, butter and omitting the cheddar (as I don’t like melted vegan cheese). It was sensational! Used leftovers to make a pita sandwich with lettuce, tomato and cucumber. Delish!

Definitely use riced cauliflower!

Can I give this 6 stars? Doubled the batch and used a head of cauliflower (chopped fairly small) and a bag of (fresh) riced cauliflower (as others have directed). The textured combo was perfect. Using only riced cauliflower would be a great time saver, but the little chunks are nice if you have the time. I had a tiny bit leftover, and put a heaping tablespoon into some frozen veggies for a quick dinner side. It’s a clutch, versatile leftover.

I made this as directed. I used a combination of a Yellow Bird Habanero Hot Sauce and Chulula’s original sauce. It was a hit of the Super Bowl party

This was fantastic, although I think I'll add more cauliflower and try to cut back on the dairy next time. I don't think the cheddar was even necessary after adding all that cream cheese & sour cream. Served with celery, carrots, mini bell peppers, and plain ruffles. Crowd pleaser! And beautiful served in the hot cast iron pan with all the colorful veggies on the side.

This was very delicious and just as satisfying as the chicken equivalent. If you want to prep ahead, do the cauliflower step and transfer to a baking dish. Make the sauce and add cheese and mix with cauliflower, add cheese on top and bake/broil when ready to serve.

I messed up and left out the butter and added the sour cream and cream cheese with the burner on. I cooked it for a few minutes with all the dairy in there. Ran it under the broiler for a minute. So good and cannot imagine butter would have improved it.

Really really good. I made this for the Super Bowl and my picky mom loved it and couldn’t stop eating it! Great with “Have’ a corn chips” and celery alike. I agree to amp up the amount of cauliflower. Take the time to cook it as directed and it is almost meaty in texture.

absolutely success !! i made this for last year's superbowl as written (but without blue cheese), but this year successfully veganized it. i used vegan butter (any would work), 8 oz of miyoko's cream cheese, no sour cream, and vitalife's shredded cheddar cheese

The two of us ate this entire recipe with tortilla chips and celery for dinner while not watching the Big Football Game. We’re not sports fans but I didn’t want to miss out on fun recipes like this one. So glad I made it — it’s delightful!
