Yield:1 drink
  • tablespoons red wine, steeped with lemon peels
  • ounce Brooklyn gin
  • ¾ounce lemon juice
  • ½ounce triple sec
  • ¼ounce gum syrup
  • 1egg white
  • Mist of absinthe
  • Dash of Angostura bitters

Preparation

  1. Step 1

    Beforehand, chill red wine that's been sweetened slightly with sugar (about a tablespoon per half cup of wine) and steeped with lemon peels.

  2. Step 2

    Next, combine one and a half ounces of Brooklyn gin, three-quarters of an ounce of lemon juice, a half-ounce of triple sec, a quarter ounce of gum syrup and an egg white. Shake and strain into a cocktail glass.

  3. Step 3

    Using a funnel, pour the red wine into the bottom of the glass so it forms a deep layer of color. Mist the top of the cocktail with absinthe (if you don't have a spare mister, drizzle a few drops of absinthe) and garnish with a few dashes of Angostura bitters.

Easy vegan way that tastes better/feels better to my mind is substituting egg white with aquafaba (use a can of chickpeas, save the liquid its in, use the chickpeas for hummus!!) Best to dry shake first - no ice - as this helps the foam be smoother, then add the ice to cool it.

Is there a particular reason why the recipe calls for Brooklyn gin?

shake with ice to chill the drink. don't worry about using funnels, the wine will sink to the bottom and if you pour it from the top it will settle in a gradient (unless you like the defined layering). garnish with lemon peel. absinthe mister is an absolute must, floating it or sprinkling a bit on the top just isn't the same and throws the drink off. nice, light, and lemony. recreating the ango hearts was fun

How on earth do you get the little hearts on top? Is it a eye-dropper and toothpick trick? That's the wine, not the Angostura, right?

Its probably the ango. A dropped would help with the hearts. Just do a bunch of drops on a line and run a toothpick through it! Super easy and cool.

I notice the recipe doesn’t call for ICE to be added to the shaker, before you shake it up. Is that deliberate? Or a typo? I followed it exactly, and it results in a room temperature drink, despite the chilled wine. And that is fine, I’m just curious if that’s desired. My verdict so far: It’s far more intriguing to make, and look at — so much fun with funnels. It takes like a jolly old Christmas punch, which it is! Not a sophisticated taste, but a sophisticated look!

If you are using an egg white I would do a dry shake first. I usually like to smack a tiny ice cube and throw it in the shaker, shake has hard as you can until you can't hear or feel your cube anymore. By that point it should be frothy enough. Then toss the full scoop of ice in, quick shake, strain into glass.

ct - The interwebs say you can sub simple syrup or agave for the gum syrup.

If you must sub, agave would be the better way, due to its more interesting texture.

What is gum syrup?

An ingredient in classic cocktails. It is simple syrup emulsified with gum Arabic, a vegetable-based thickener which imparts a silky texture to the syrup.
