The lush combination of honey and butter is a classic for biscuits, but adding crunchy salt is a modern touch that makes this topping sing. The chef Joe Dobias uses alaea red salt from Hawaii for color contrast, but any large-grained sea salt will work. If using other salts, you may need less — add sparingly and taste as you go. —Julia Moskin

Preparation

  1. Step 1

    Using a mixer (either hand or standing), whip butter and honey together until smooth and fluffy. Fold salt in gently with a rubber spatula. Serve soft or at room temperature, with a few extra grains of salt on top.

I missed the note about adding sparingly and tasting as you go, and dumped in the whole 1T... way too much!!!! I had to double the butter and honey to even it back out. Once I fixed my mistake, though, oh my god, so good. The texture in particular is awesome -- I had to remind myself that it is not okay to eat spoonfuls of butter!

Pure Heaven! I used the Hawaiian red alaea sea salt, the eye appeal,crunch and taste of the salty/sweetness makes you swoon! Seriously!! This has become a staple that will be in a crock,top shelf in my fridge from now on. Awesome,easy recipe!

Used real maple syrup instead - so easy to pour - and it was out of this world

One of the other comments says the recipe says to fold in the salt bit by bit and flavor to taste. Unfortunately for me, the version of this recipe that I saw and the one that is displayed in the app right now does not say that. Beware: 1 tbsp of salt (even very course salt with big crystals) is way too much. Try 1 tsp first and then put in more if needed

I also missed the note about adding the salt sparingly and it was inedible with the full tablespoon. I had to double the butter and honey to make it useable. It would be helpful if that note was added to the preparation instructions, as I didn’t read the introduction before beginning prep. Next time I would start with a teaspoon. But it gets rave reviews once everyone tried it!

I found that 2 teaspoons of Maldon were right on-target, but other than that, my goodness this was delicious. It's a keeper.

Definitely ease the salt in and don't dump it all in at once. I would also recommend upping the honey a little bit and tasting as you go. I put in the recommended amount and I don't find the honey taste comes through very strongly.

Could one use whipped butter instead of a stick of butter to speed up the process?

1 teaspoon of salt works well!
